Summer lasagne |
Wow! This week has been busy and A.MAZ.ING! But I am a long way behind on posts (or my visual diary entries as I think of them) so now I'm doing a desperate catch up. I'm also desperately attempting to rehydrate by downing Gatorade before Jet and I go for a run. I haven't exercised since Thursday, and with all the decadence of Christmas food and wine I'm feeling rather sluggish, but boy was it worth it-more about that latter.
Last week was unseasonably cold in Sydney, so one morning I decided to make lasagne for dinner with our home grown tomatoes. But as the day progressed, the sun came out and it got warm. So I 'summered' up the lasagne. Beef mince was switched for a combination of pork and turkey mince, and zucchinis from the garden were added. Yummo!
This dish shouldn't be served up as a traditional lasagne, as it has a very different flavour. But summer lasagne is a winner, and in true lasagne form, it tastes better the next day.
